Created by butchers and meat technologists from the finest quality ingredients, this Newly Weds Foods Medium rusk is widely used in the production of sausages, pies and other compound meat products.
What is Rusk?
Rusk is a kind of biscuit or light bread dough baked twice until it is hard. One key use for rusk is as the cereal ingredient utilized in manufacturing ground meat products especially the sausage. Rusks unique characteristics impart the yielding texture and subtle flavor profiles expected of this great staple.
When used, Rusk helps to control the moisture and fat migration, and also deliver a more rounded and desirable flavour and texture.
This Newly Weds Pinhead 20KG Rusk has a baked flour flavour and is presented as free flowing cream white granules.

The first size is measured when the product is passed trough different sieve sizes. Its passes through the largest sieve first, then in descending order.
Pinhead
1% retained on 1.7mm sieve
50-60% retained on a 0.85mm sieve
20-30% retained on a 0.42mm sieve
Maximum of 22% passing through all the sieves.
Therefore about 80% of this Pinhead rusk is below 1.7mm and above 0.42mm.
