Part of the Lucas Butchers Classic range, this sausage mix is free flowing blend of
seasoning and rusk with leek and savoury notes. Contains visual dried leeks and herbs. No need to add your own rusk as a mix has rusk already blended in, so this is ideal for small runs.
How it comes Supplied in a white cardboard box with 4 x 567g individual sachets.
Dosage To make a 4.54kg (10lb) batch add 3.224kg of pork meat (71%) to 1 x 0.567kg sachet with 0.749kg cold water/ice. Mix thoroughly and let stand to absorb the water before filling into casings.
Usage rate is 12.5%. This rate is higher than a seasoning as it contains the rusk in the blend.
1x 0.567 sachet will make approx 80 sausages, a box of 4 x 0.567kg approx 320 sausages.
